๐ŸŠ Cocktails with Colleen: Blood Orange Gin Fizz

Iโ€™m calling it nowโ€”this is my new favorite cocktail. I truly cannot get enough of it.

This time of year, I find myself craving anything citrus. It instantly takes me back to childhood, when my parents would receive crates of oranges and grapefruits from friends in Florida. Opening those boxes felt like sunshine delivered to the front doorโ€”and this drink feels the same way.

Bright, refreshing, and just a little special, this Blood Orange Gin Fizz is the kind of cocktail that works for a casual night in or as a signature drink for a dinner party.


โœจ Why This One Is a Winner

What I love most about this cocktail is how forgiving and flexible it is. You donโ€™t need to make a special trip to the store or track down one specific ingredient for it to be delicious.

No blood oranges?
โ†’ Use navel oranges.

Donโ€™t feel like squeezing citrus?
โ†’ Your orange juice and lemon juice from the fridge will do just fine.

Have simple syrup on hand?
โ†’ Use it instead of honey.

No seltzer?
โ†’ Club soda works perfectly.

Want something a little warmer and more earthy?
โ†’ Muddle a sprig of fresh rosemary in the bottom of your shaker before adding the rest of the ingredients.

Makes 1 cocktail

Ingredients

  • 2 oz gin
  • 1 oz fresh blood orange juice
  • ยฝ oz fresh lemon juice
  • ยฝ oz honey
  • Lemon seltzer or club soda, to top
  • Ice
  • Optional garnish: blood orange slice

How to Make It

  1. Fill a shaker with ice.
  2. Add gin, blood orange juice, lemon juice, and honey.
  3. Shake well until chilled, aboutย 10โ€“15 seconds.
  4. Strain into an ice-filled coupe glass.
  5. Top with seltzer.
  6. Garnish with an orange slice and serve immediately.

๐Ÿฒ The Soup I Make When I Need Comfort (and Something Really Good)

Some nights call for a recipe that feels like a deep exhale.

It was chilly here last night, and when I canโ€™t quite shake the cold, my brain immediately jumps to, โ€œAm I getting sick?โ€ (Spoiler: I usually am not.) Still, I knew exactly what I wanted to makeโ€”something warm, nourishing, and bold enough to wake up my taste buds.

Thatโ€™s when this Spicy White Bean & Wilted Greens Soup comes out.

This is the kind of soup that fills your kitchen with the most incredible aroma, warms you from the inside out, and somehow feels both comforting and energizing at the same time.


๐Ÿฒ Why This Soup Works So Well

What I love most about this soup is that it gets its creaminess from white beans, not dairy. The beans break down just enough to give the broth body and richness without weighing it down.

You can easily adjust the heatโ€”add more red pepper flakes if you want a little kick, or dial it back for a gentler bowl. Either way, the flavors are deep, aromatic, and incredibly satisfying.

And then thereโ€™s the nutritionโ€”because this is one of those rare dishes that tastes indulgent while being undeniably good for you.

  • White beansย provide calcium, iron, and fiber
  • Mixed greensย are packed with vitamins A and C, beta-carotene, calcium, folate, and phytonutrients
  • Garam masalaย brings anti-inflammatory and antioxidant benefits
  • Turmericย supports inflammation reduction and boosts antioxidants

๐Ÿฒ Spicy White Bean & Wilted Greens Soup (GF/DF)

2 tbsp olive oil
1 large onion, chopped
4 garlic cloves, pressed
ยฝ tsp red pepper flakes
1 tsp fresh ginger, grated
ยฝ tsp salt
ยผ tsp pepper
1 tbsp Garam Masala
2 tsp ground turmeric
2 15oz cans white beans, drained and rinsed
4 cups vegetable stock
1 lime, juiced
4 cup mixed greens, coarsely chopped

  1. Heat the oil in a Dutch Oven set over medium-high heat.
  2. Add the onion, garlic pressed with a garlic press, red pepper flakes, ginger, salt and pepper and cook, stirring occasionally, until the vegetables are soft and the onions start the brown, about 8-10 minutes.
  3. Sprinkle in the garam masala and turmeric and continue to cook, stirring occasionally, until the mixture is coated and the spices start to darken in color, 1-2 minutes.
  4. Add the beans and stock and stir, scraping up any browned bits. Bring to a simmer and cook 15-20 minutes.
  5. Remove 1 cup of the beans and transfer to a bowl. Using an immersion blender, blend the beans until smooth, then return to the pot and stir.
  6. Meanwhile, coarsely chop the greens.
  7. Add the greens and lime juice to the soup and stir to wilt the greens. Taste and season with salt and pepper.
  8. Divide the soup among bowls and serve.

Makes 4 servings

โœจ No Occasion Required: Why You Donโ€™t Need a Reason to Host a Dinner Party

This is the year of getting together.
Of lingering a little longer.
Of enjoying each otherโ€™s companyโ€”without waiting for a reason.

Life is full of milestones and holidays to celebrate, but hereโ€™s the truth: you donโ€™t need a special occasion to host a dinner party. Sometimes, the best reason is simply wanting to be together.

We all love going to dinner parties. And once you get past the overthinking, thereโ€™s so much to love about hosting one too.


๐Ÿฅ‚ Why Host at All?

Hosting creates something restaurants just canโ€™t:

  • More intimate conversation
  • Time to connect one-on-one with each guest
  • A chance to try a new recipe (or make a favorite again to share)
  • An excuse to use those entertaining pieces you justย hadย to have

And the best part?
Youโ€™ll realize halfway through the evening that youโ€™re having fun too.


๐Ÿฝ๏ธ The Only Things You Really Need

If youโ€™re still overthinking it, let me simplify things even further. A dinner party really only needs 3.5 basic elements:

1. Location

This doesnโ€™t mean a formal dining room.

Have one? Greatโ€”use it.
Donโ€™t? Also great.

Gather around the kitchen island, eat at the kitchen table, or set up a borrowed folding banquet table in the family room. One time, our furnace went out on the day of a planned dinner party. The only warm room was the family room with the fireplaceโ€”so we moved the furniture, set up a table, and enjoyed a cozy fireside dinner.

It was perfect and memorable.


2. Guests

The days of โ€œhaving the boss for dinnerโ€ may feel long goneโ€”but why not?

Hosting is a wonderful way to deepen relationships and introduce people to one another. Family, friends, neighbors, coworkersโ€”mix and match. Some of the best conversations happen when different circles come together around the same table.


3. Food & Beverages

If youโ€™re a paid subscriber, this part is already handled. My dinner party plans take all the guesswork out of what to serve and how to pace it.

If youโ€™re not? Keep it simple. Good food doesnโ€™t need to be complicated to be memorable.


3.5 Entertainment (Optional)

I go back and forth on this oneโ€”which is why one of my monthly dinner party plans includes a built-in activity.

You donโ€™t need entertainment, but sometimes itโ€™s nice to pair dinner with something else: a movie, a game, a shared experience. It can take the pressure off conversation and give the evening a fun rhythm.

โ™ ๏ธ Card Game Night, Dinner Party Style

Quick note before we dive in: going forward, I wonโ€™t normally give you two dinner party menus just a week apart. The flu slowed me down on introducing the first partyโ€”and I didnโ€™t want to hold up the Game Night one too. Thanks for your understanding (and flexibility)!

Nowโ€ฆ the holidays are behind usโ€”whew! Itโ€™s time to relax, have a little fun, and gather around the table again.

This themed dinner party is the perfect excuse to invite close friends (or finally get together with those โ€œwe should do this sometimeโ€ people) for good food, laughter, and a little friendly competition.

I grew up in Michigan, where the card game of choice is Euchre. Iโ€™ll admit itโ€”I never actually learned how to play. But if any of my mitten friends want to teach me, Iโ€™ll happily host.

Of course, this dinner party works for any favorite card game: Bridge, Poker, Uno, Rummyโ€ฆ even Cards Against Humanity. The game is just the excuse. The real goal is connection, great food, and plenty of laughs.

There are some recipes that arenโ€™t just about feeding peopleโ€”theyโ€™re about taking care of them. This is one of those dishes.

I turn to these Asparagus, Ham & Swiss Mini Quiches whenever a friend is under the weather, overwhelmed, or simply going through a hard season. Theyโ€™re warm, comforting, and practical in a way that feels deeply thoughtful. When your mind is in a million places, having something ready-to-go in the freezer can be an enormous relief.

These mini quiches are the kind of food that says, โ€œYou donโ€™t have to think about this right nowโ€”Iโ€™ve got you.โ€


๐Ÿ’› Why This Is Such a Meaningful Make-Ahead

โœจ They freeze beautifully.
Pull one out when you need it, reheat, and suddenly a meal is handled.

โœจ Theyโ€™re perfectly portioned.
Small, manageable servings feel less overwhelming when appetite is low or energy is limited.

Itโ€™s simple, versatile, and quietly generousโ€”exactly the kind of recipe that earns a permanent place in your rotation.


๐Ÿฅง Asparagus, Ham & Swiss Mini Quiche

1 cup all-purpose flour, plus additional for dusting (can also use 1:1 gluten free flour)
1 egg white
1/2 cup cold butter, cut into pieces
1-2 tablespoons cold water
7 eggs
3/4 cup milk (can also use oat milk)
2 tablespoons Italian seasoning
8 ounces asparagus, woody stems snapped off and cut into 2-inch pieces
8 ounces deli ham, cut into 1/4-inch cubes
4 ounces Swiss cheese, shredded

  1. Heat the oven to 350หšF.
  2. Place the flour, egg white and butter in a food processor fitted with the multi-purpose blade. Pulse into coarse crumbs. Add the water, 1 tablespoon at a time, until the dough comes together into a ball.
  3. Transfer the dough to a lightly-floured mat and roll 1/8-inch thick. Cut out six 6-inch rounds and place into the pie pans. Prick the bottom with a fork, then transfer to the freezer to chill while you prepare the filling.
  4. Set a small skillet filled with 2 cups water over medium-high heat. Heat to simmering, then add the asparagus and cook 2 minutes, then drain.
  5. In a large bowl, whisk the eggs, milk, and seasoning mix and set aside.
  6. Remove the crusts from the freezer and set on a sheet pan. Sprinkle the ham over the bottom of each. Top with half of the cheese, then the asparagus. Pour the custard into the crusts just enough to cover the ham, cheese and asparagus filling. Top with the remaining cheese.
  7. Place the mini quiches in the oven and bake 25-30 minutes or until set and golden. Remove from the oven and cool completely before covering with foil for transport.

โœจ Easy: Use a refrigerated pie crust instead of making your own. It saves time and no one will know the difference.

โœจ Easier: Make it vegetarian and use frozen, pre-cut vegetables. I love frozen bell peppers and onions or a broccoli medleyโ€”theyโ€™re convenient and always ready when you need them.

โœจ Easiest: Purchase a premade quiche, portion it into individual servings, and wrap each piece separately. Remember: it never has to be homemade. It just needs to be easy and comforting for the person receiving it.

โœจ Yes, You CAN Host a Dinner Party: Letโ€™s Debunk the Excuses

When I really started sharing this passion projectโ€”creating dinner party menus and plansโ€”I received two kinds of feedback.

One sounded like this:
โ€œThis is amazing. I canโ€™t wait to read more.โ€

The other sounded like this:
โ€œHosting a dinner party would never work for me.โ€

Whenever I heard the second response, I always asked the same question:
โ€œTell me moreโ€”why not?โ€

The answers were honest, familiar, and very human. So today, letโ€™s talk about the most common reasons people think they canโ€™t hostโ€”and why I truly believe you can (and should at least try).


1. โ€œI Canโ€™t Cook.โ€

Is that really trueโ€”or is it the easiest way out?

If cooking isnโ€™t your strength, Iโ€™ve got you covered. Every recipe in my dinner party guides includes easy, easier, and easiest options, so you can match the effort to your comfort level.

And hereโ€™s a spoiler alert worth repeating:
You do not have to make everything yourself.

Great hosting isnโ€™t about proving culinary skills. Itโ€™s about feeding people wellโ€”however that happens.


2. โ€œMy House Isnโ€™t Guest-Clean.โ€

Translation: itโ€™s cleanโ€ฆ but not guest-clean. And guest-clean means dealing with piles youโ€™ve been ignoring since 2019.

Let me burn these two truths into your memory:

  1. No one is coming over to see how clean your house is.
  2. You only need to clean the rooms your guests will use.

Thatโ€™s it.
The room where youโ€™re eating and the bathroom theyโ€™ll use. Everything else? Close the door. No one should be wandering into other rooms anyway.


3. โ€œI Have Kids.โ€

Honestly? Thatโ€™s even more reason to host!

Kids can helpโ€”and learnโ€”so much from being part of it:

  • Setting the table
  • Making place cards
  • Tidying up
  • Helping with simple prep

Iโ€™ll also be sharing ideas for keeping kids happily occupied while dinner is happening so you can actually enjoy yourself.

And one more thing:
Watching and helping my parents host dinner parties was my education. Itโ€™s how I learned everything Iโ€™m sharing with you now.


4. โ€œI Have Dietary Needs.โ€

This one truly surprises meโ€”because itโ€™s actually the BEST reason to host!

As someone whoโ€™s gluten-free, Iโ€™ve been to plenty of parties and restaurants where my options were limited (or awkward). When you host, you control the menu. You make food you can eatโ€”and enjoy.

Worried about others being โ€œsubjectedโ€ to your dietary needs?
Remember: this is not the only meal theyโ€™re having that day.


5. โ€œSmall Talk for Three Hours Is Exhausting.โ€

You love people.
From a safe distance.
On your couch.
In pajamas.

I get it.
