1ยฝ oz gin
1 oz fresh blood orange juice
ยฝ oz thyme simple syrup (see below)
2 oz Prosecco (chilled)
1 oz club soda (chilled)
Ice cubes
Garnish: blood orange twist + fresh thyme sprig

  1. In a cocktail shaker with ice, combine gin, blood orange juice, and thyme simple syrup. Shake gently for about 10 seconds.
  2. Strain into a wine glass or large coupe filled with ice.
  3. Top with chilled Prosecco and a splash of club soda.
  4. Twist a segment of blood orange peel over the glass to release its oils, then drop it in. Add a sprig of thyme for that herbal aroma.

Makes 1 cocktail

Thyme Simple Syrup

Combine ยฝ cup water, ยฝ cup sugar, and 4โ€“5 sprigs of fresh thyme in a small saucepan. Bring to a simmer, stirring until sugar dissolves. Remove from heat and steep for 10 minutes. Strain and cool. Store in the fridge for up to 2 weeks.

We served them at a recent dinner party and โ€” no exaggeration โ€” the bowl was scraped clean by the end of the night. Thatโ€™s always the sign of a winning recipe.

Parsnips add a warm, slightly spicy earthiness that plays beautifully with the sweetness of the carrots and the richness of the brown butter. 2 lbs carrots, peeled and chopped into 1-inch pieces
2 lbs parsnips, peeled and chopped into 1-inch pieces
6 tbsp unsalted butter
ยฝ cup heavy cream (or milk)
1 tsp salt, plus more to taste
ยผ tsp black pepper
1 thyme sprig
Optional: 1โ€“2 tsp honey or maple syrup for extra sweetness

  1. In a large pot, add carrots and parsnips and cover with cold, salted water.
  2. Bring to a boil, then reduce heat to medium and simmer for 20โ€“25 minutes, until very tender.
  3. Drain well and return to the pot to let excess steam escape (this keeps your mash from being watery).
  4. In a small saucepan, melt the butter over medium heat.
  5. Continue cooking, swirling the pan often, until the butter turns golden brown and smells nutty โ€” about 4โ€“5 minutes.
  6. Remove from heat immediately to prevent burning.
  7. Add the browned butter, cream, salt, and pepper to the cooked carrots and parsnips.
  8. Mash with a potato masher for a rustic texture or blend with a hand mixer or food processor for a smoother purรฉe. (I use a food processor).
  9. Taste and adjust seasoning โ€” add a drizzle of honey or maple syrup if youโ€™d like a touch more sweetness.
  10. Transfer to a serving bowl and drizzle with a little extra browned butter and garnish with thyme leaves.
