One of the things I love most about these muffins is how versatile they are. They start with simple ingredients you probably already have on hand, and from there you can dress them up however you like.

Recently, I grabbed a salad topping mix from Costco (yes… a salad topping!) and tossed it right into the batter. It was a blend of dried cranberries, sunflower seeds, and pumpkin seeds — and it added the best chewy-crunchy texture and a pop of flavor in every bite. Total surprise. Total hit.

Whether you’re meal-prepping for the week or need something warm and comforting with your morning coffee, these muffins belong in your rotation.

🧁 Applesauce Muffins

½ cup butter or margarine, softened
1 cup sugar
1 egg
1 cup applesauce
2 cups all-purpose flour
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 teaspoon baking soda
Âź teaspoon salt
½ cup chopped nuts

  1. Heat the oven to 400°F.
  2. In a large bowl, beat together the butter and sugar at medium speed of an electric hand mixer until well blended. Blend in the egg and applesauce.
  3. In a small bowl, combine the flour, cinnamon, nutmeg, baking soda and salt. Add to the butter mixture and mix well. Stir in the nuts.
  4. Spoon the batter into a muffin pan, filling each cup ⅔ full.
  5. Bake 25 minutes or until golden brown.

Makes 12 muffins.
