When most people hear the words game night, they picture pizza boxes, paper plates, and a quick round of cards before everyone heads home. And while thereโ€™s certainly nothing wrong with that, I think game night can be so much more.

There are certain recipes that quietly become the stars of the table. Not because theyโ€™re complicated. Not because they take hours to prepare. But because every single bite tastes like the season. This Summer Lovinโ€™ Citrus Salad is exactly that kind of recipe.

Bright oranges, juicy pomegranate seeds, creamy goat cheese, crunchy pistachios, and a simple honey-lime vinaigrette come together to create a salad thatโ€™s fresh, colorful, and anything but ordinary. Whether youโ€™re hosting a summer dinner party, taking a dish to a cookout, or simply looking for a lighter meal on a warm evening, this salad belongs on your menu.

One of my favorite things about entertaining is serving dishes that look like they took far more effort than they actually didโ€”and this is definitely one of them.

Better yet, most of the prep can be done ahead of time. Segment the oranges, toast the pistachios, and whisk together the vinaigrette earlier in the day. When itโ€™s time to eat, simply assemble the salad and serve.

One of the reasons I love this salad is that itโ€™s every bit as nutritious as it is beautiful.

Serves 8

Honey-Lime Vinaigrette

  • ยผ cup olive oil
  • 3 tablespoons fresh lime juice
  • 1 tablespoon honey
  • ยฝ teaspoon Dijon mustard
  • ยผ teaspoon salt
  • โ…› teaspoon black pepper

Directions

Whisk together the olive oil, lime juice, honey, Dijon mustard, salt, and pepper until smooth and well combined.


Salad

  • 10 ounces mixed greens
  • 3 oranges, peeled and segmented
  • 1 cup pomegranate seeds
  • ยฝ small red onion, thinly sliced
  • 4 ounces goat cheese, crumbled
  • ยฝ cup toasted pistachios, roughly chopped

Directions

  1. Place the mixed greens in a large serving bowl.
  2. Arrange the orange segments, pomegranate seeds, sliced red onion, and goat cheese over the greens.
  3. Drizzle with the honey-lime vinaigrette and gently toss to coat.
  4. Sprinkle with the toasted pistachios just before serving.
  5. Serve immediately.

๐Ÿฝ๏ธ The Simple Act Thatโ€™s Slowly Disappearingโ€ฆ and Why We Need It Back

Yesterday, I came across a quote on Instagram that stopped me in my tracks:

โ€œSharing a meal is how we remember we are not in this world alone.โ€

Then I read something even more sobering: One in four Americans now eats every meal alone.

That statistic honestly made my heart hurt. Not because thereโ€™s anything wrong with occasionally enjoying a quiet meal by yourself. I do it, too. But because when it becomes the norm instead of the exception, I think we lose something important.


โค๏ธ More Than Just Dinner

When we gather around a table, something remarkable happens.

โœณ๏ธ We ask questions.
โœณ๏ธ We tell stories.
โœณ๏ธ We laugh.
โœณ๏ธ We celebrate.
โœณ๏ธ We comfort one another.
โœณ๏ธ We solve problems.
โœณ๏ธ We remember birthdays, anniversaries, promotions, new babies, and sometimes we simply celebrate making it through another week.

Meals have always been about so much more than food. Theyโ€™re where relationships grow.


๐Ÿ“ฑ Weโ€™re More Connected… Yet More Alone

Ironically, weโ€™ve never had more ways to communicate. We can text instantly. Video chat across the country (which I do with my family every Sunday). Comment on someoneโ€™s vacation photos before theyโ€™ve even unpacked.

And yet many people feel lonelier than ever.

Technology is wonderful. I use it every day. But a text message has never replaced sitting across from someone while sharing a meal. Thereโ€™s something about breaking bread together that reminds us weโ€™re part of a community. That we belong.

When people hear the words โ€œdinner party,โ€ they often picture elaborate menus, formal table settings, and a guest list that feels impossible to manage.

Thatโ€™s not what Iโ€™m talking about. Iโ€™m talking about small-scale entertaining.

Invite another couple. Ask your neighbors over for burgers. Have your sister over for soup. Invite friends for dessert and coffee. Host brunch for four. You donโ€™t need twelve guests to create meaningful connection.

Sometimes all it takes is one invitation.

I donโ€™t think the answer is complicated. I think it starts with each of us making one simple decision: Invite someone over.

Not because the house is perfect. Not because itโ€™s a holiday. Not because youโ€™ve mastered a new recipe. Simply because people need people. Imagine what could happen if each of us invited just one person, one couple, or one family to our table each month.

Friendships would deepen. Neighbors would become friends. Children would grow up watching adults gather around the table. And perhaps that statistic would begin to move in a different direction.

๐Ÿซโค๏ธ๐Ÿค๐Ÿ’™ A Slice of Summer: Red, White & Blueberry Buckle

Some recipes simply taste like childhood. This one certainly does for me.

I canโ€™t remember a single Fourth of July when we didnโ€™t have my grandmotherโ€™s Blueberry Buckle. Weโ€™d spend the holiday at her summer house on Skaneateles Lake, where my aunts, uncles and cousins gathered all day, and this dessert always made an appearance.

After dinner, weโ€™d head down to the shoreline. As darkness settled in, neighbors around the lake would light flares along their docks while fireworks sparkled in the distance. Looking back, I realize it wasnโ€™t just the dessert that made those evenings memorable.

It was the tradition. The gathering. The feeling that everyone belonged around the table before heading outside together.

This recipe is an updated version of my Grandma Keadyโ€™s Blueberry Buckle, created in her honor. Iโ€™ve added fresh strawberries to give it a patriotic red, white, and blue twist while keeping everything I loved about the original. Every time I make it, Iโ€™m reminded that some of the best family traditions begin with something as simple as dessert shared around a table.

Thatโ€™s exactly why I still make this recipe today.

Some recipes are about more than ingredients. Theyโ€™re about preserving memories, honoring the people who taught us to gather, and creating new traditions for the people sitting around our own tables.

This Red, White & Blueberry Buckle is bursting with sweet strawberries and juicy blueberries beneath a buttery cinnamon streusel topping. Itโ€™s the kind of old-fashioned dessert that never goes out of style. Simple enough for a casual family dinner, yet special enough for your Fourth of July celebration or summer dinner party.

I love desserts that donโ€™t require elaborate decorating or professional baking skills. This buckle is rustic by design, which means every pan turns out beautifully.

Using seasonal berries not only gives this dessert incredible flavor, but also allows you to take advantage of produce at its freshest and most nutritious.

Makes 10 servings

Cake

  • ยพ cup sugar
  • ยผ cup shortening
  • 1 egg
  • ยฝ cup milk
  • 2 cups sifted flour
  • 2 tsp baking powder
  • ยฝ tsp salt
  • 1 cup well-drained blueberries
  • 1 cup chopped strawberries

Topping

  • ยฝ cup sugar
  • โ…“ cup sifted flour
  • ยฝ tsp cinnamon
  • ยผ cup soft butter

Directions

  1. Heat the oven to 375ยฐF and grease an 8×8-inch baking pan or line with parchment paper.
  2. Cream together the sugar and shortening.
  3. Beat in the egg, then stir in the milk.
  4. Blend the flour, baking powder, and salt into the wet ingredients using a fork.
  5. Gently fold in the blueberries and strawberries.
  6. Spread the batter evenly into the prepared pan.
  7. In a small bowl, combine the topping ingredients until crumbly and sprinkle evenly over the batter.
  8. Bake for 45โ€“50 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  9. Cool slightly before serving.
