🍊 Summer in a Bowl: The Salad You’ll Make on Repeat

There are certain recipes that quietly become the stars of the table. Not because they’re complicated. Not because they take hours to prepare. But because every single bite tastes like the season. This Summer Lovin’ Citrus Salad is exactly that kind of recipe.

Bright oranges, juicy pomegranate seeds, creamy goat cheese, crunchy pistachios, and a simple honey-lime vinaigrette come together to create a salad that’s fresh, colorful, and anything but ordinary. Whether you’re hosting a summer dinner party, taking a dish to a cookout, or simply looking for a lighter meal on a warm evening, this salad belongs on your menu.

One of my favorite things about entertaining is serving dishes that look like they took far more effort than they actually did—and this is definitely one of them.

It’s beautiful enough for a special occasion but simple enough for a weeknight dinner. Pair it with grilled chicken, shrimp, salmon, or steak, and you have a complete meal that’s light, satisfying, and perfect for summer.

Better yet, most of the prep can be done ahead of time. Segment the oranges, toast the pistachios, and whisk together the vinaigrette earlier in the day. When it’s time to eat, simply assemble the salad and serve.

One of the reasons I love this salad is that it’s every bit as nutritious as it is beautiful.

Pomegranate seeds are rich in polyphenols and antioxidants that may help reduce inflammation while supporting heart health. They also add fiber and a satisfying burst of sweetness.

Pistachios contribute heart-healthy fats, plant-based protein, and fiber, helping make this salad more satisfying while adding a delicious crunch.

🍊 Summer Lovin’ Citrus Salad

Serves 8

Honey-Lime Vinaigrette

  • ¼ cup olive oil
  • 3 tablespoons fresh lime juice
  • 1 tablespoon honey
  • ½ teaspoon Dijon mustard
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper

Directions

Whisk together the olive oil, lime juice, honey, Dijon mustard, salt, and pepper until smooth and well combined.


Salad

  • 10 ounces mixed greens
  • 3 oranges, peeled and segmented
  • 1 cup pomegranate seeds
  • ½ small red onion, thinly sliced
  • 4 ounces goat cheese, crumbled
  • ½ cup toasted pistachios, roughly chopped

Directions

  1. Place the mixed greens in a large serving bowl.
  2. Arrange the orange segments, pomegranate seeds, sliced red onion, and goat cheese over the greens.
  3. Drizzle with the honey-lime vinaigrette and gently toss to coat.
  4. Sprinkle with the toasted pistachios just before serving.
  5. Serve immediately.

Easy: Purchase pomegranate arils and peeled citrus segments from the produce department to save prep time.

Easier: Use a high-quality bottled citrus vinaigrette instead of making the dressing from scratch.

Easiest: Start with your favorite spring mix salad kit and simply add fresh oranges, goat cheese, and pistachios for an effortless shortcut.
