  • 3–4 green onions (scallions), sliced
  • 1½ cups shredded mozzarella cheese
  • 2 tbsp balsamic glaze
  • Salt and pepper, to taste
  • Optional: Chopped fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Heat the olive oil in a skillet over medium heat. Add the yellow and red onions and cook for 8–10 minutes, stirring occasionally, until softened and lightly caramelized. Season with salt and pepper.
  3. Stir in the sliced green onions during the last minute of cooking.
  4. Arrange the naan or mini flatbreads on a baking sheet.
  5. Spread a thin layer of balsamic glaze over each flatbread.
  6. Divide the onion mixture evenly among the flatbreads and sprinkle with the mozzarella cheese.
  7. Bake for 8–10 minutes, or until the cheese is melted and bubbly and the edges are lightly golden.
  8. Garnish with fresh parsley, if desired, and cut into halves or quarters before serving.
