This is one of my all-time favorite appetizers — easy, delicious, and always the first thing to disappear at a party. If you’re someone who usually side-eyes Brussels sprouts, this is the recipe that will change your mind. Promise.

If Brussels sprouts traumatized you as a kid, there’s a reason.

Back in the 1990s, scientists identified the bitter compounds in sprouts — called glucosinolates — and began selectively breeding low-bitterness varieties. The result?

Combine that improvement with modern roasting techniques, and what you get is a caramelized, crispy, irresistible little nugget of goodness.

🥦 Crispy Brussels Sprouts Bites with Citrus Aioli

For the Brussels Sprouts:
1 pound Brussels sprouts, trimmed and halved
1½ tbsp olive oil
½ tsp salt
¼ tsp black pepper
pinch of crushed red pepper flakes or smoked paprika for extra flavor

For the Citrus Aioli:
½ cup mayonnaise
1 tsp lemon zest (about ½ lemon)
1½ tsp fresh lemon juice
½ small garlic clove, finely grated or minced
Pinch of salt

  1. Heat oven to 425°F (220°C).
  2. Toss halved Brussels sprouts in olive oil, salt, and pepper.
  3. Arrange cut-side down on a parchment-lined baking sheet.
  4. Roast for 20–25 minutes, until the edges are crisp and golden brown.
  5. Meanwhile, in a small bowl, whisk together mayonnaise, lemon zest, lemon juice, garlic, and a pinch of salt.
  6. Taste and adjust with more lemon juice or zest for brightness.
  7. Refrigerate until ready to serve.
  8. Transfer roasted Brussels sprouts to a platter. Serve warm with the citrus aioli for dipping.
