This cocktail is everything I love on a cold winter night — light, fragrant, refreshing, and beautifully layered with flavor. It’s one of those drinks where you can taste every single ingredient, and each one plays its part perfectly.
The star of the show?
The thyme syrup.
Please don’t skip it.
It takes just a few minutes to make, and the way it elevates this spritz is unreal. It brings a gentle herbal warmth that balances the brightness of the blood orange and the crisp botanicals of the gin.
If you love a cocktail that feels both cozy and elegant, this one belongs in your winter rotation.
✨ Why You’ll Love It
- Light, bright, and beautifully aromatic
- A refreshing winter cocktail that doesn’t feel heavy
- Easy to batch for parties
- That thyme syrup… trust me, it’s the secret weapon
- Perfect for holiday hosting or an intimate dinner at home
Serve it in a stemmed glass with a sprig of thyme, and it looks just as gorgeous as it tastes.
✨ Sparkling Blood Orange Thyme Gin Spritz
1½ oz gin
1 oz fresh blood orange juice
½ oz thyme simple syrup (see below)
2 oz Prosecco (chilled)
1 oz club soda (chilled)
Ice cubes
Garnish: blood orange twist + fresh thyme sprig
- In a cocktail shaker with ice, combine gin, blood orange juice, and thyme simple syrup. Shake gently for about 10 seconds.
- Strain into a wine glass or large coupe filled with ice.
- Top with chilled Prosecco and a splash of club soda.
- Twist a segment of blood orange peel over the glass to release its oils, then drop it in. Add a sprig of thyme for that herbal aroma.
