Even though it’s baked, it doesn’t feel heavy. The roasted artichokes bring a fresh, slightly nutty flavor that pairs perfectly with warmer weather meals, making it a wonderful addition to everything from brunches to summer dinner parties on the patio.

🌿 Roasted Artichoke Gratin with Herbs

This is one of those recipes that signals the shift into spring and summer gathering season.

4 (14 oz) cans artichoke hearts, drained and halved
1 tbsp olive oil
1 red bell pepper, finely diced
2 cloves garlic, minced
1 cup heavy cream
¾ cup grated Parmesan cheese
½ cup shredded mozzarella cheese
2 tbsp fresh parsley, chopped
1 tbsp fresh thyme (or 1 tsp dried)
1 tbsp fresh chives, chopped
Zest of 1 lemon
¾ tsp salt (adjust to taste)
½ tsp black pepper
½ cup panko breadcrumbs
2 tbsp melted butter
2 tbsp grated Parmesan cheese

  1. Heat the oven to 400°F.
  2. Pat the artichokes dry and spread them on a baking sheet. Toss with olive oil, salt, and pepper. Roast for 15–20 minutes until lightly golden and slightly crisp on the edges.
  3. In a bowl, combine heavy cream, garlic, Parmesan, mozzarella, parsley, thyme, chives, lemon zest, salt, and pepper.
  4. Transfer roasted artichokes to a greased 2-Qt. baking dish. Add the bell pepper and stir to combine. Pour the cream mixture evenly over the top.
  5. In a small bowl, mix panko, melted butter, and Parmesan. Sprinkle evenly over the gratin.
  6. Bake for 20–25 minutes until bubbly and golden brown on top.
  7. Let rest for 5–10 minutes before serving. Garnish with extra herbs.

Makes 8 servings

Easy: Use marinated artichoke hearts and skip the seasoning and oil.

Easier: Swap fresh herbs for an Italian seasoning blend.

Easiest: Use a store-bought Alfredo sauce as the base—just mix, top, and bake.

🐾 Pets & Parties: What to Do with Rover and Morris When Guests Arrive

One question that comes up surprisingly often when people start hosting more is this:

“What do I do with my pets during a dinner party?”

After all, pets are part of the family. They live in the house every day — so it can feel strange suddenly excluding them when guests arrive.

But when entertaining, a little planning around pets can make the evening more comfortable for everyone involved — including you.


🐱 Cats Usually Solve This Problem Themselves

If you have cats, you’re likely already familiar with their approach to social gatherings.

Most cats will happily excuse themselves and disappear the moment unfamiliar voices enter the house.

If you prefer to keep them tucked away, simply make sure they have:

  • Plenty of food and water
  • A fresh litter box
  • A quiet room where they can relax undisturbed

They’ll likely sleep through most of the party anyway.


🐶 Dogs Are a Different Story

Dogs, on the other hand, often believe a dinner party was planned specifically for them.

If your dog is anything like mine, she wants to greet every guest, sniff every bag, and be in the middle of the action 100% of the time.

While that enthusiasm is adorable, it can sometimes be a little overwhelming — especially when guests are arriving, coats are coming off, and drinks are being poured.

For that reason, it’s often best to keep dogs in another room during the beginning of the party until everyone is settled.


🤧 Consider Your Guests

When deciding what to do, always think about your guests as well.

Some guests may:

  • Have allergies to cats or dogs
  • Feel overwhelmed by a pet that wants constant attention
  • Be nervous or fearful around animals

Even the friendliest pet can unintentionally make someone uncomfortable.

Giving pets their own space during the gathering helps ensure that everyone feels relaxed.


🕯️ A Few Hours Is Perfectly Fine

The good news is that pets are incredibly adaptable.

Spending a few hours in another room with their bed, toys, food, and water won’t hurt them at all — and it allows you to focus on hosting without extra distractions.

If needed, you can always excuse yourself briefly to let the dog out for a quick break and then return to the party.

Your guests will hardly notice.


✨ The Goal

The goal of entertaining is to create a comfortable environment where everyone can enjoy the evening.

Sometimes that simply means giving Rover and Morris their own little dinner party in another room.

And that’s perfectly okay.

🍃 Not Wasabi… Wabi-Sabi

One is a plant.
One is a philosophy.

Today, we’re talking philosophy.

You may have heard the term wabi-sabi, a Japanese aesthetic that celebrates beauty in imperfection, simplicity, and the natural cycle of growth and change.

At first glance, it can sound like the idea is to intentionally create imperfections — a crooked bowl, a chipped cup, something slightly uneven.

But as I read more about it, I realized something important.

Wabi-sabi isn’t about creating flaws.

It’s about accepting that flaws are inevitable — and letting them exist without stopping us.


✨ Perfection Is the Enemy of Trying

We live in a world that often feels like everything has to be camera-ready.

The table should look like a magazine spread.
The meal should be restaurant-perfect.
The house should look like no one actually lives there.

And for many people, that pressure becomes the reason they never host at all.

They think:

“My table isn’t fancy enough.”
“My cooking isn’t good enough.”
“My house isn’t perfect enough.”

And that stops them right in their tracks.


🍽️ Gathering Has Never Been About Perfection

Wabi-sabi reminds us that beauty often lives in the aged, weathered, asymmetrical, or incomplete.

A table that isn’t perfectly matched.
A platter that’s been used for decades.
A meal that’s a mix of homemade and store-bought.

Those things don’t diminish a gathering.

They make it authentic.


🥂 Why I Created My Dinner Party Guides

This philosophy is one of the reasons I created my dinner party guides.

They’re designed to remove the pressure.

Did you know you can follow the guide and never make a single recipe yourself?

You can:

  • Cook part of the menu
  • Purchase part of it
  • Or invite guests to contribute a dish

There are no rigid rules. The goal is simply to create a moment where people come together.

Because that’s what humans have done since the beginning of time.

Turmeric Chicken, Chorizo & Pinto Bean Skillet

Some nights you want dinner to be two things: fast and full of flavor.

This skillet meal checks both boxes beautifully.

Turmeric Chicken, Chorizo & Pinto Bean Skillet is one of those dishes that comes together quickly but tastes like it took far more effort. It’s layered with savory, smoky, and slightly earthy flavors that work together effortlessly, creating a meal that feels hearty and satisfying without being heavy.

And let’s be honest for a moment—it’s also gorgeous.

The golden color from the turmeric, the vibrant peppers, and the richness of the chorizo make this one of those meals that looks as good as it tastes. And as we all know… we eat with our eyes first.

Why This Dish Works So Well

One of the biggest reasons to love this recipe is its simplicity. Everything cooks together in one pan, which means fewer dishes and less time spent in the kitchen.

It’s also flexible. You can serve it over traditional rice for a comforting, filling meal or over cauliflower rice if you’re looking for something lighter. Either way, the flavors shine.

This kind of meal is perfect for busy weeknights, but it’s also impressive enough to serve casually when friends drop by. The bold aromas alone will have everyone asking what’s cooking.

Turmeric Chicken, Chorizo & Pinto Bean Skillet
Makes 6 servings

1 small onion, chopped
1 red bell pepper, diced
4 ounces ground chorizo
1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
2 garlic cloves, pressed
1/2 cup chicken stock
1 15oz can pigeon peas or pinto beans, drained and rinsed
1/2 teaspoon oregano
1/2 teaspoon turmeric
1/2 teaspoon salt
3 cups cauliflower rice
cilantro, chopped

  1. Add the chorizo to a medium skillet.  Cook over medium-high heat 3-4 minutes or until browned, stirring and chopping frequently. 
    Remove the chorizo from the skillet into a bowl and keep warm.
  2. Cook the chicken in the same skillet 2-3 minutes or until browned.  Remove the chicken and place in the bowl with the chorizo and set aside. 
  3. In the same skillet, combine the onion, bell pepper, and garlic.  Cook 3-4 minutes over medium-high heat or until the onion begins to soften.  Add the stock, pigeon peas, oregano, turmeric and salt and bring to a boil. 
  4. Add the chorizo and chicken to the skillet, cover and reduce the heat to low.  Simmer 15-20 minutes or until the liquid is absorbed and the chicken and chorizo are cooked through.  Remove from the heat and let stand, covered, for 5 minutes. 
  5. Spoon the rice into serving bowls. Top with the chicken and chorizo mixture, sprinkle with cilantro (if desired) and serve.

🚪 Your Home, Your Boundaries: Hosting Without Giving the Grand Tour

One question that comes up more often than you might think is this:

“How do I protect my privacy when I entertain?”

The good news is the answer is simple.

Just because you’re hosting people in your home does not mean your entire home is open for viewing.

This isn’t a real estate showing and it’s certainly not an open house.

When you invite guests over, you are welcoming them into the spaces meant for gathering — typically the living area, dining space, kitchen, and guest bathroom.

Everything else? Completely optional.


🏡 Keep It Simple

If there are rooms you’d prefer guests not enter, the easiest solution is simply:

Close the door.

A bedroom with an unmade bed, a home office with stacks of paperwork, or the laundry room that exploded earlier that day — none of these require attention before guests arrive.

Most people will instinctively understand that a closed door means private space.

If you’re worried someone might wander in accidentally, a small sign that simply says “Private” works perfectly.

Simple. Clear. No awkward conversations required.


👨‍👩‍👧‍👦 When Children Are Attending

If there’s a chance younger guests will be present, it’s perfectly reasonable to take an extra step.

Children are naturally curious and sometimes closed doors feel more like invitations than boundaries.

In those cases, locking the door during the party is completely acceptable. It protects both your privacy and anything inside the room that you’d rather not have explored.

Think of it as making hosting easier — not being overly strict.


✨ The Real Goal

Remember, guests come to see you, not your entire house.

They’re there for the conversation, the meal, the laughter, and the time spent together.

Not a hallway tour.

So close the doors you need to close, enjoy the spaces you’ve prepared, and focus on the evening in front of you.
