It’s that time of the year again – summer is here, and so is the season of picnics, outdoor lunches, and entertaining. Last year, we were all obsessed with those viral virtual folded wraps, and this time, I have an exciting twist that will take your summer gatherings to a whole new level! These folded wraps are not only perfect for a picnic, lunch, or appetizer but also incredibly fresh and, let’s admit it, darn cute!
In this blog post, I’ll walk you through an easy and versatile recipe for making these delightful folded wraps. Plus, I have an alternative version that packs extra nutrition while still being equally delicious. So, let’s dive in and get ready for a summer full of delightful flavors and unforgettable memories!
The beauty of these folded wraps lies in their simplicity and customizability. To start, I recommend using street taco-size tortillas. However, if you can’t find them, don’t worry! You can use extra-large tortillas and cut them into 4-inch rounds using a cookie cutter. This way, you can maintain the fun and manageable size for your wraps.
Now, this is the fun part! Once you have your basic ingredients, you can mix and match to your heart’s content. Feel free to explore various flavor combinations and textures. Some ideas include:
- Mediterranean Wrap: Fill it with grilled eggplant, cherry tomatoes, feta cheese, and a dollop of tzatziki sauce.
- Asian Fusion Wrap: Combine teriyaki-glazed tofu, julienned bell peppers, bean sprouts, and a sprinkle of sesame seeds.
- Tex-Mex Twist: Layer on seasoned ground beef, black beans, corn, salsa, and a dollop of sour cream.
The possibilities are endless, and it’s a great way to please everyone’s taste buds at your summer gatherings.
If you’re looking to add an extra nutritional boost to your folded wraps, consider using collard greens as a substitute for tortillas. Collard greens are packed with vitamins A and C, both of which are vital for a healthy immune system. Vitamin C helps keep your blood cells in top shape, while vitamin A supports your T-cells, the superheroes of your immune system that protect your body from invading bacteria and viruses. To use collard greens, simply wash them thoroughly, trim the stems, and blanch the leaves in boiling water for a few seconds to make them pliable. Pat them dry with a paper towel, and they’re ready to be filled with your favorite ingredients!
These folded wraps are the epitome of summer fun and freshness. Whether you’re hosting a picnic, a lunch gathering, or just looking for a quick and tasty appetizer, these wraps have got you covered. Remember, there are no strict rules here – feel free to mix and match ingredients to suit your preferences and dietary needs.
So, get creative in the kitchen, indulge in the bounty of summer produce, and share these delightful folded wraps with your loved ones. Embrace the season of sun, joy, and delicious food!
I hope you enjoy making and savoring these folded wraps as much as I did. Let me know in the comments below about your favorite flavor combinations or any other exciting variations you come up with.
Enjoy!

Basil-Turkey Folded Wraps(GF)
Ingredients
- 16 street taco-size flour tortillas
- 1 6oz container herb-and-garlic spreadable cheese, softened
- 2 medium medium Roma tomatoes, sliced ¼-inch thick
- 1 1oz package fresh basil leaves, stems removed
- 1/2 pound thinly sliced smoked turkey from the deli
- 16 toothpicks
Instructions
- Lay the tortillas flat and about about ½ way up the center of each. Warm the tortilla if you want to make folding easier.
- Spread a thin layer of the herbed cheese over the lower left quadrant of the leaf. Place a single layer of tomatoes in the upper left quadrant, then top with a single layer of the basil leaves. Layer the turkey evenly in the upper right quadrant. Finish with an additional layer of herbed cheese in the lower right quadrant.
- Fold the left side herbed cheese quadrant up to lay on top of the tomato and basil quadrant. Fold the first two layers to the right to lay on top of the turkey quadrant. Then fold the first three layers down to lay on top of the herbed cheese layer.
- Secure with toothpicks if necessary and serve on a platter.
